Eye of Newt {Chia} Pudding



Looking for a ghoulish treat that's also good for you? Try this Eye of Newt {Chia} Pudding. It is full of healthy ingredients that pack a nutritional punch. Chia seeds are a wonderful source of iron, potassium, calcium, protein, omega 3s, and antioxidants - just to name a few.  And almond milk, which is naturally low in fat, is high in vitamins, protein, and fiber. Combined, they make a uniquely textured pudding that is the perfect eerie treat to serve to your little ghosts and goblins this Halloween.

Ingredients:
  • 1 cup Almond Milk
  • 2 drops Green Food Coloring
  • 1/4 cup Chia Seeds
  • candy eyes

Method:

Begin by mixing the two drops of green food coloring into the milk. (I used regular, liquid food coloring.)


Stir in the Chia seeds, cover, and refrigerate for at least 4 hours. (I usually just mix mine up the night before.) Stir the mixture to break up any clumps, and return it to the fridge for a couple more hours.


Pour the prepared pudding into a serving dish and garnish with a few candy eyes.


Makes 1 - 2 servings




Enjoy!

PS - Chia pudding also makes a delicious, energy packed, and low calorie breakfast. Just skip the food coloring and candy eyes. ;o)
