Buffalo Chicken Bacon Ranch Salad


Swimsuit season is upon us! If you're like most people, you are probably looking for new and exciting ways to eat healthier, or maybe even loose a few pounds. This salad is perfect for that! It tastes great, and it has a healthy balance of protein and carbs, so that you'll feel fuller longer - making it easier to stay on the right track. Even if you're not dieting, you will love the variety of flavors that this salad brings.

Ingredients:
  • 2 strips of Bacon
  • 1 cooked Chicken Breast, chunked
  • 1 Tbs Buffalo Wing Sauce 
  • 2 cups Leafy Greens 
  • 1 Boiled Egg
  • 1/2 cup Corn 
  • 4 - 6 bite sized Tomatoes, optional
  • Ranch Dressing

Method:

Fry your bacon until crisp, and remove to paper towels to drain and cool. 


Place your chicken breast chunks and wing sauce in a bowl. (You can use any kind you like, grilled, rotisserie, or even canned. I had a fried chicken breast leftover from last night's Supper, so that is what I used. I did remove as much of the skin as I could, though) Gently toss until the pieces are well coated. (Depending on your tastes, and the size of your chicken breast - you may need a little more, or a little less sauce. Just use your best judgement.) Let them rest in the bowl while you start to assemble the salad.

Lay out your leafy greens on a plate. (I used green leaf lettuce today, but you can use anything that you like.) Arrange the chicken down the middle of the plate. Slice the egg, and arrange the slices on one side of the chicken. Now put the corn on the other side. Finally, place your tomatoes around, if using. (Tomatoes taste really great in this salad. I just didn't have any today.)

Crumble your bacon over the top, and drizzle on a little bit of your favorite ranch dressing.


Makes 1 salad.
